Hello again, I’m in the kitchen and as I said earlier, if I see something pretty or unusual…I’ve got to try to make it. I don’t even remember what I was looking at that brought me to see this recipe but it caught my eye and you guessed it….I went to the store and got the ingredients.         

I don’t know about you but I do love cheesecakes and I’ve been known to make some awesome combinations myself (e.g. coffee and chocolate, pumpkin, eggnog, white chocolate, strawberry, salted caramel…to name a few) but I would have never thought to combine lemon meringue and cheesecake together with a shortbread cookie crust (yum…yum).  

Well, here it is….I wanted you to see the lemon topping on the cheesecake, the meringue then placed on top (bake just 10 minutes more) and the finished slice served and ready for taste!

Yes, it is delicious…..who knew…well, we all know now.
