“Let’s Have a Little Taste of the Homeland”
African Chicken Peanut Stew
The one thing I love about the winter season is my ability to make all kinds of soups and stews (even though I make them all the time) but there’s something about sitting down – snuggled on the couch, with a steamy hot bowl of soup, accompanied by a toasted slice of French or Italian bread, (crackers if you must :-). This scenario just shouts comfort and warm fuzzy in my tummy.
Well, as usual, a new soup recipe caught my eye called African Chicken Peanut Stew. It was something about the name itself that stirred a cultural pull in me and I couldn’t wait to see what seasonings this recipe was going to use.
It’s always a little game I play with myself to see which seasonings I have and what I have to purchase. I’ve had the privilege of developing quite an extensive cabinet of seasonings…which is key for good soups. This recipe calls for fresh ginger (one of my favorites), coriander, cayenne pepper, and of course salt and pepper. I was pleasantly surprised to see it’s usage of sweet potatoes which is something many people don’t think to add in a soup. I wondered where the peanut flavor was going to come from….you guessed it – peanut butter and roasted peanuts.

Oh my……I wish computers had a smell component….the aroma of this soup is just awesome…I can’t wait to try it. (few minutes later…) Well…I tried it and it is delicious! The cayenne pepper really adds a kick to it which I like and the chicken and sweet potatoes makes this quite the meal. Well…I will be adding this to my notebook of soup recipes, the opportunities are endless.

Well, I didn’t think I could make soup until I brought a cook book and decided to make a go of it. Now you can’t stop me. I will be making this one when I get back home. Lord willing. Thanks again
